Make Your Own Butterbeer

Happy Harry Potter Day, Friends! (Everyone has "Harry Potter Day" written in their planners, right? #nerdalert) If you don't already know, July 31st is Harry Potter's birthday, making this date "Harry Potter Day" to wizarding fans of all ages!

Last year, one of our favorite bakeries celebrated by offering up adorable wizard-inspired sugar cookies and butterbeer floats! We were planning on making the voyage again, but the bakery is not celebrating HP Day this year. (Some trickery by He-Who-Must-Not-Be-Named must be at play!)

Not one to be easily thwarted, I looked up recipes for butterbeer online and found these. I adapted recipe #2, which is supposed to be quite close to the butterbeer you can purchase at the Wizarding World of Harry Potter in Orlando. (I've never been, but I'm dying to go!) The butterbeer was an absolute hit with my kids! (It's totally not THM, but I tried a couple of sips as well.) It's creamy goodness, and the spices make it extra-special!

Butterbeer Recipe

Serving size: makes enough to fill 4 big frosty mugs!

Ingredients:
* 2 cups (264 g) vanilla ice cream, softened a bit
* 1 stick (8 T) butter, melted
* 1/3 C brown sugar
* 2 tsp. ground cinnamon
* 1/2 tsp. nutmeg
* 1/4 tsp. cloves
* 24 oz. (two 12-oz. cans) cream soda
* optional: Redi-Whip

Materials:
* 4 large glass mugs, made frosty in the freezer (optional, but highly recommended!)
* large glass bowl + immersion blender OR blender

Procedure:
1. Combine ice cream, butter, brown sugar, cinnamon, nutmeg, and cloves in a big bowl. Use an immersion blender to mix. (Alternatively, you can put the ingredients in a blender and blend.)

2. Optional: If you want to make a slushie version, freeze the ice cream mixture. (I did not do this.)

3. Distribute ice cream mixture evenly (about 3.7 fl. oz. per mug) and top with 6 oz. cream soda. The drink gets a nice head on it. I stir it a bit with a knife while I'm pouring the cream soda to combine and also to allow room for all of the soda. If desired, top with a swirl of Redi-Whip!

I had all of the ingredients on hand. (Woo-hoo!) I used Zevia cream soda because it's what I had in the house, and it also helps cut down on the sugar a bit. Also, Theodorbs.
