Meal-Plan Monday {2/20/17 - 2/26/17}
Welcome to another week, friends! Here's what we're having for dinner! I'm cooking less than I normally do, because we have a cuh-razy week. Dan has an overnight business trip in Chicago; he will be giving his professional opinion as a third-party expert witness in Federal Court. We've also got lots of homeschool classes and field trips.
{monday, 2/20}
Ginger-Peach Chicken in the slow-cooker, rice
{tuesday}
Eating out! We're going to Chili's with Nana! (Kids eat free on Tuesdays.)
{wednesday}
Favorite Casserole (The name speaks for itself, yo!)
{thursday}
Leftovers
{friday}
Pizza, salad
(The boys like cheese, but Dan and I like some variety. Hack: buy a pepperoni pizza, rearrange the pepperonis so they are only on one-half of the pizza. [Discard the other half.] The result is half cheese and half pepperoni! Be sure to blot the pepperoni side with a paper towel after it comes out of the oven to cut fat and calories.)
{saturday}
Chickpea and Vegetables Coconut Curry Soup
(This came highly recommended by a dear friend. I'm excited to try it!)
{sunday}
Leftovers or (if there are not enough leftovers) PC&A (popcorn, cheese, and apples)
What are you cooking this week? Do you have any recipes to share? We love trying new meals over here! 🙂
P.S. I just realized I never told you about our Valentine's Day! The meal from Festival Foods was great, and we would totally do that again. The only disappointment was the heart-shaped cheesecake for dessert. It was so light and fluffy, it didn't really resemble a cheesecake. I also ordered a "Date Night In" box for Dan and me. It was fun, but we felt like the cost was primarily paying for an idea, and there's Pinterest for that. We enjoyed it as a one-time gift though!
