Meal-Plan Monday [3/12 - 3/18/2018]

Happy Monday, Friends! I hope you all had a nice weekend. Theodorbs seems to be dropping his morning nap, which is throwing my routine into all kind of confusion. I was really hoping he'd continue napping in the morning until the school year was finished, but he hasn't taken a morning nap in about a week, and we've got NINE more weeks of school left! Not that I'm counting down or anything. 😉 If you saw my Facebook post about Theo's mischevious twin, Me-odore, you'll know how terrifying this is. He basically just wanders around emptying drawers, throwing items in the trash (we couldn't find our ice cream scoop last week and had to dig it out of the refuse), turning the computer ON and OFF and ON and OFF..., pulling the towels down and throwing them on the floor, dumping water onto the carpet, finding a tissue and tearing it into a million pieces... You get the idea, right? Argh! It's such a good thing he's darling and the sunshine of my life!! Well, here's what's for dinner this week... if Theo allows it. 😉

Slow-Cooker Barbecue Chicken

This will be served atop whole-wheat buns with a side of steamed broccoli.

Tacos + Fat-Free Refried Beans + Mexican Rice

These tacos will be made with ground turkey. My kids still don't like tacos, but I'm not going to stop trying! I mean, who doesn't like tacos? I'm pretty sure liking tacos is an important life skill.

[wednesday, Pi Day!]

Spaghetti Pie + Salad + Lemon Meringue Pie

In honor of the magical number 3.14, I'll be serving up spaghetti pie (I'll be tweaking this recipe according to the comments) along with a lemon meringue pie from Schwan's. (I don't think I'll have the energy to make a homemade pie. If I do, I'll make a peanut butter pie.)

Out to Dinner - Asian Buffet

My mom is on her annual sisters' trip in the Southwest. (She can stop sending me pictures of her drinking iced tea in the sunshine anytime now. Kidding! She totally deserves a relaxing vacation!) My dad is going to take us out to a favorite Asian buffet, and the boys are going to load up on sushi!

Out to Dinner - Fish Fry

Dan and I looked at the calendar and realized there aren't many Fridays left in Lent. Friday fish fries are a tradition in Wisconsin, and we can't just skip it!

Corned Beef + Steamed Cabbage + Boiled Veggies + Irish Soda Bread

We take our Irish heritage seriously around here! I buy a flat-cut of corned beef and bake in a shallow dish in the oven, following the directions on the package. For the veggies, I boil baby red potatoes, baby carrots, and onion wedges until fork-tender. I then season with butter, salt, and pepper. (I may even sprinkle on some finely chopped parsley if I'm feeling fancy!) The Irish soda bread is storebought from Pick 'n Save.

Dinner at Nana and Papa's House

I'm not entirely sure this is going to happen since it will be the day after my mom returns from her trip. I'm going to offer to bring pizza or fried chicken and cross my fingers!
