Meal-Plan Monday {8/21 - 8/27/2017}
Hi, Friends!
I'm frustrated. I have so much I want to share with you (travelling to Chicago with the littles, our trip to the zoo, my ah-mazing discovery at the zoo that all nursing mamas should know about, what I've been reading lately, and some new faves, just to name a few), but I am finding it so difficult to find time to sit down at the keyboard! I know enough about blogging by now that in order to have a "successful" blog, one must blog every. single, day. (At least, at first.) I just can't commit to that. So I want to say a great big thank you for hanging with me!
While I'm composing those other posts (in my head, at least!), I thought I'd whip up a quick meal-plan Monday post! Here's what we're having this week:

Pizza Moons + Salad
We're celebrating the solar eclipse with this easy themed dinner! I'm doubling it and subbing halved string cheese sticks for the shredded mozzarella.

Rigatoni alla Carbonara + Caesar Salad Kit + Garlic Breadsticks
It's Dan's birthday! As part of his gift, I always offer to make him a homemade meal of his choice, and he elected to have one of our family's all-time favorites: Carbonara (Bacon and Egg Coal Miner's Pasta). The boys will be whooping.

This recipe's a winner. It's easy, tasty, light, and the whole family loves it!

Chicken and Rice {see recipe below} + Corn + Salad
I was digging through our freezer, and I noticed I have a lot of boneless, skinless chicken to use up! I got this recipe from my MIL, and it's ridiculously easy and yummy. Ready?
Ingredients:
- 2-2.5 pounds boneless, skinless chicken breast
- (3) 10.5-oz. cans cream of chicken soup
- Rice
Procedure:
- Pour one can of undiluted cream of chicken soup into the bottom of the slow-cooker.
- Place all chicken in the slow-cooker and add remaining two cans of soup over the top.
- Cook on LOW for 4-6 hours. (Be careful not to overcook the chicken!)
- Make rice according to package instructions.
- Serve chicken over rice.

Note: We finally had our game night in which we played the Harry Potter version of Clue, and it was every bit as amazing as I hoped.

Dan's parents are taking us out to celebrate his birthday. We're probably headed to an all-you-can-eat buffet because those work well for our big family!

Popcorn, Shrimp, and Apples
This is a little twist on the usual Popcorn, Cheese, and Apples I serve on Sunday. My kids LOVE cocktail shrimp, and it's on sale this week, so I'm subbing the cheese for shrimp as the protein in their meal.
Also, some of our local grocery stores started offering online ordering. It. Was. Glorious. The angels are singing, people. Yet another blog post I want to write! Sigh!
