Meal-Plan Monday {9/11 - 9/17/2017} + A Recipe for Cornbread You're going to L-O-V-E

Our homeschool is entering its sixth week of school for the year, and Logan will FINALLY be experiencing his first day of preschool today! My poor buddy has been waiting (and waiting and waiting), so he's super-excited to begin. I asked him what he thought he'd be doing at preschool, and he exclaimed, "I will be eating candy ALL DAY!" Haha, Logan might be in for a bit of a rude awakening, especially given that the handbook states the school's preference for no birthday treats and organic snacks. I'm sure he's still going to have a blast though!

I really need to do another round of big-batch freezer cooking, because I feel like all I do these days is cook. I try to choose recipes that make big portions, but, lately, these recipes haven't been giving me as many leftovers as I'd like! It doesn't help that half of my kids have BIG appetites, especially three-year-old Logan. On Wednesday morning, for example, Logan ate three eggs, a piece of toast, a pancake, and two breakfast sausages. Did I mention that he's three?! So today, to celebrate the first Football Sunday of the year, I made a veritable feast: a pot of chili, a pound of noodles (growing up, we always ate our chili over noodles), hot dogs, and a big pan of cornbread. The boys love buttered noodles, so I'm hoping the extra noodles will serve as a lunch one day this week.

I'm putting my stove to work! I've got chili, noodles, and hot dogs simmering away. I try to do a lot of cooking on the weekends, so I don't have to do as much later.

 

I recently asked my Facebook friends for their favorite cornbread mixes or recipes, and I got a lot of great responses! I did want to try them all (and I still may!), but I'm not sure there's a need because the first one I tried was ah-mazing! It was super-easy, delicious, and made a big portion. Ding-ding-ding, we have a winner! Thanks, Katie!

Katie's Cornbread Recipe

Ingredients:
* 2 boxes Jiffy cornbread mix
*2 eggs
*2/3 cup milk
*1 box yellow cake mix (I also used Jiffy)
*1 can Sprite or 7-Up (diet works too, if that's your jam)

Procedure:
1) In a large bowl, mix 2 boxes of Jiffy as directed, including the milk and eggs.
2) Add cake mix and soda.
3) Mix with a hand-mixer.
4) Pour into a greased 9x13 pan.
5) Bake at 350 until the middle is done. (Katie suggested an hour, but mine was done around 35 minutes.)

Dan will be at a golf outing, so I thought it would be fun to take the boys out to dinner. We're going to find a restaurant where kids (at least some of them) eat free.

Slow-Cooker Chicken Tacos x2

The CC Essentials moms are having a Mexican-themed viewing night, so I'm making a double batch of chicken tacos. We'll have them for dinner, and I'll bring what's remaining to our get-together. My children (strangely) do not love tacos, so I should have plenty.

Our local homeschool community group is having its school-year kick-off party, so we'll be eating there. However, I will be making Caramel Apple Pork Chops and Mashed Sweet Potatoes, so I can serve them up on Monday.
