Microwave Scrambled Egg
This super-simple breakfast checks lots of boxes in the categories of my all-time favorite recipes! It's nutritious, quick, versatile, and makes very few dishes. You can eat the egg as is, or you can get creative with it. I like to put it on top of whole-wheat toast and sprinkle with a little salt and pepper. (If I have any spinach in the fridge, I like to tear some and add it to the scramble.) You can also make your own breakfast sandwich by placing it between English muffin halves, along with American cheese and sausage or bacon. I also like to put it on top of a tortilla, chop it up a bit, sprinkle a little extra cheese on top (microwave a bit more to melt the cheese), and add a teaspoon or two of salsa for a quick and easy breakfast burrito. The possibilities are endless!
Ingredients:
- Non-stick cooking spray
- 1 egg
- A splash of milk (I don't measure, but I'd guess it comes out to be 1-2 teaspoons.)
- Shredded cheddar (about 1 tablespoon) (The cheese is optional, but recommended by this Wisconsin girl!)
- Salt and pepper, to taste
Procedure:
{1} Spray a microwave-save bowl with non-stick cooking spray. (Do not skip this step, or it will be difficult to remove your egg from the bowl when it's cooked.)
{2} Crack an egg into the bowl. Add a splash of milk and a sprinkle of shredded cheddar.
{3} With a fork, scramble the egg.
{4} Cover the bowl with a paper-towel and microwave for about 1 minute and 15 seconds. (You may have to play around with the time. The eggs cooked best for 1:20 in the microwave at our old house, and they do best for 1:10 in the microwave at our current house. Be careful not to cook it for too long, or it might pop in your microwave!)
{5} Carefully remove the egg with a fork.
