Super-Simple Salsa

This salsa is the happy medium between buying a jar from the grocery store and making the whole she-bang from scratch. It's ridiculously easy and tastes waaaay better than the jarred variety. The result is a great big bowl of salsa, but, if your house is like mine, you'll still find that it's gone in a flash.

Super-Simple Salsa

Ingredients:

1 (15-oz) can diced tomato with pepper, celery and onion (I like Hunt's brand.)
1 (15-oz) can petite diced tomatoes
1 (10-oz) can Mild Rotel
1 medium onion (about 1 cup), chopped
1 (1-oz) packet salsa spice mix (found by the canning supplies in the grocery store)
Fresh cilantro, chopped (optional) (You can also use fresh parsley if you don't care for cilantro.)

Preparation:

In a large bowl, combine both cans of tomatoes and onion. Add two tablespoons salsa mix and taste. Continue to add salsa mix, 1 tablespoon at a time, until desired heat level is reached. (Note: I usually just dump in the whole packet.) If adding cilantro, add your desired amount. You can eat right away, but it tastes best after it's chilled for a while.
